Keto "hashbrowns" (zucchini)
Do you miss hashbrowns like I do? Before I was "enlightened" by keto, I could have hashbrowns for breakfast, lunch and dinner. It's such a comfort food for me. So, you know I HAD to figure this out! Serve with eggs and sausage, or bacon!
Grate zucchini with a medium sized grater.
Add salt and place shredded zucchini in a clean dishtowel or cheesecloth and squeeze to get as much liquid out of it as possible.
Place zucchini into bowl, add add beaten eggs, thinly sliced green onions, almond flour, parmigiano reggiano, and fresh ground black pepper and mix thoroughly.
- Once oil is shimmering add spoonfuls of mixture in hot oil and fry until golden brown on each side. About 2-3 minutes per side.
- Place on platter lined with paper towels to soak up any grease that sticks to the fritter and serve with sour cream and extra green onions on the side.
