Let’s face it, cauliflower is NOT pizza!
You know it…I know it, we all know it. If you don’t like the taste of cauliflower, it’s really hard to do keto. But here’s an alternative and even the kids like it! If you don’t have almond flour, just get it….and get LOT’S of it!
Preheat oven and pizza stone to 425°
Bake 8-10 min
1½ cups shredded mozzarella, or parmesan cheese
2 oz full fat cream cheese, cut into chunks
1 large egg
1 1/4 cup almond flour
1 tbsp oat fiber (or 2 tbsp whey protein powder or 1/4 cup more almond flour)
Microwave all ingredients for 1 minute and form into a ball. Refrigerate for 20 min and roll on onto parchment paper. Poke holes with fork to help dough cook evenly. Bake crust for 10 min. Then add toppings and bake for another 8-10 min.
1 1/2 cup mozzarella cheese (5 oz /150 g)
1/2 cup keto-friendly marinara or 1/4 cup red pepper pesto
20 slices pepperoni slices (or as much as you’d like) (1.5 oz/43 g)
1/2 onion slices
1 whole green bell pepper
Yield 10-inch pizza, about 5 carbs per slice, 6 slices.
